Pink Atole
Serves 4
INGREDIENTS
- 4 cups 2% milk
- 4 ounces sugar
- 4 teaspoons corn starch
- 1 teaspoon vanilla
- 3 ounces fresh strawberries
- 2 ounces fresh raspberries
DIRECTIONS
- Pour 3½ cups of milk into a large saucepan. Add sugar, mix and heat at medium-low temperature for 10 minutes. Do not boil.
- Mix corn starch with remaining milk and vanilla. Add to saucepan and stir constantly with a wooden spoon to avoid lumps. Boil until thickened.
- Cool at room temperature, add berries and blend. Serve cold or at room temperature.
