These light and delicious meatless meals provide some alternatives from heavy holiday indulgences.

Breakfast:

Irish Porridge With Chestnut Honey

If your diet has been all over the map this holiday, start the week with a hearty bowl of oatmeal. This extraordinary recipe calls for apples, raisins and walnuts, along with a few tablespoons of Irish whiskey. But if you have had enough holiday cheer for the week, leave that out!

Lunch:

Southeast Asian-Style Vegetable Stew

This one-dish meal will be ready in under an hour. The flavors of lime and coconut in the broth are a refreshing change from some of the heavy sauces and ingredients from our favorite holiday feasts.

Dinner:

Pumpkin Ravioli With Fried Sage

If you are making fresh pasta for the first time, ravioli is a good recipe to start with. Single sheets of pasta are relatively easy to handle and a pizza cutter can be used to trim edges straight. If you have family home for the holidays, this can be a fun project to do together.
