Pam's new meatless cookbook continues the case for eating less meat.

"Fig Newton" Oatmeal

Serves 4

This recipe easily halves to serve 2.

3 1/2 cups vanilla soymilk

2 cups old-fashioned oatmeal

Pinch salt

2/3 cup coarsely chopped dried figs

1/4 teaspoon ground cloves

1/4 cup toasted pecans, chopped

Bring milk, oatmeal, salt, figs and cloves to simmer in a large saucepan or 5- to 6- quart Dutch oven over medium-high heat. Reduce heat to medium-low and cook, stirring occasionally, to desired thickness, about 5 minutes. Serve, sprinkling each portion with toasted pecans.
