Meatless Monday Recipes

A healthy breakfast, Greek lunch and casserole dinner. Yum!

Try some new pancakes, and fire up the oven for phyllo pastries and a favorite casserole.

Breakfast:
Four-Grain Fitness Pancakes

Take a few extra minutes this morning to gather the ingredients for these super-healthy waffles. Add some chopped nuts and top with fresh berries.

Lunch:
Spinach, Dill and Feta Baked in Phyllo Dough

Look for phyllo dough in the freezer section of your supermarket. These easy little pastries are delicious as a main dish or party appetizer this holiday season.

Dinner:
Fennel and Potato Gratin

Add a salad to this delicious fall casserole and settle in for the evening.
