As chef Laura Pensiero writes when describing her recipe for Gigi BLT Salad With Roasted-Tomato Vinaigrette, "Put bacon on the menu and it sells!" Now a flavor in everything from beer to chocolate, bacon adds a salty richness that's hard to resist. It can be high-fat, but these recipes use lots of healthy ingredients; a hint of bacon just makes them a bit more wonderful.

1. Citrus Bacon Brussels Sprouts

A touch of bacon can turn Brussels sprouts from an uninspiring side dish to a crispy, flavorful delight. Chicken broth, brown ale and orange juice combine to make a hearty and tangy sauce for the sprouts.

2. Confetti Hominy
