    Meatless Monday Recipes

    This week try some new versions of your favorite comfort foods for a meatless meal

    Start the day with a bread pudding made in a slow cooker and then some timesaving recipes for lunch and dinner.

    Breakfast:
    Breakfast Bread Pudding

    Cookbook author Robin Robertson recommends this recipe for a slow cooker with an automatic "keep warm" function. The recipe includes apples and soy sausage for a savory "comfort" breakfast or brunch on a crisp fall morning.

    Lunch:
    Shaved Fennel, Green Apple and Pecorino Romano Salad

    This easy and inexpensive dish is elegant in its very simplicity. Shaved vegetables and a slightly salty cheese tossed with a good quality olive oil and lunch will be ready in less than 15 minutes.

    Dinner:
    Cannelloni With Tomato Eggplant Sauce
    Use oven-ready pasta to save time and ensure perfectly stuffed cannelloni for this main course. If you are feeling creative make your own sauce, or save time and buy another favorite brand at the supermarket.
