Waffles are not just for Sunday mornings anymore. Most everything you need is already in the pantry. If you don't happen to have berries, substitute sliced peaches, chopped mango or any of your favorite fruits.
Lunch:
Sardinian Chickpea and Fennel Soup
If you missed out on an Italian vacation this year, make this soup and savor the aroma of a Sardinian afternoon. If you don't have chickpeas on hand, substitute with white beans or other legumes.
Dinner:
Penne and Vegetable Salad
If you have run out of ways to use the bounty of summer vegetables, here is another recipe that can serve as a base to substitute what you have on hand. This is delicious served at room temperature as well as warm.
