Labor Day, observed on the first Monday in September, marks the end of the summer season in much of the country: the last hurrah of barbecues, pool parties and eating outdoors. Before ushering in the beginning of football season and gearing up for autumn, Labor Day is a perfect opportunity to try those grilling recipes that were overlooked on Memorial Day and the Fourth of July.

If you spent the summer filling up on burgers and brats, these barbecue chicken recipes will provide a finger-licking change. There's also a selection of more barbecue sauces, for use on chicken, ribs, or slathered on any food you prefer.

Barbecue Chicken:

Pit-Barbecued Chicken by Eula Mae Dore: This barbecue chicken slow-cooks in a barbecue pit for about two and a half hours, allowing the flavors to deepen and permeate the meat.

Chicken With Barbecue Sauce by Joan Nathan: This chicken recipe starts roasting in the oven, then is transferred to the grill to caramelize the sauce.

Honey Mustard Barbecued Chicken by Victoria Blashford-Snell and Brigitte Hafner: Drumsticks steep in a tangy marinade for hours, then are glazed with honey, whole-grain mustard and lemon zest.

Gingered Barbecued Chicken Breasts by Michele Urvater: Fresh ginger gives this barbecued chicken recipe an extra kick.

Six More Barbecue Sauces:

Beer Mop Sauce by Cheryl and Bill Jamison

Hank Coleman's Barbecue Sauce by Christopher Idone

Mean, Meaner, Meanest Barbecue Sauce by Julee Rosso and Sheila Lukins
