Take advantage of fresh inspiration for Meatless Monday with some summer corn, tomatoes and fresh berries. What a delicious day of eating.

Breakfast:
Corn Hotcakes With Blackberry Syrup    

Have some fresh corn on the cob leftover from the weekend? Shuck some of the creamy kernels into the hotcake batter and top with your own fresh blackberry or blueberry syrup. A breakfast this delicious couldn't be easier.

Lunch:
Quesadillas With Salsa Mexicana

Quesadillas, satisfying but light, may be replacing the melted cheese sandwich as a popular lunch item. There are so many varieties of tortilla shells now, from whole wheat to pesto and sun-dried tomato. Add some sautéed seasonal veggies inside and you are limited only by your imagination. The variety and quality of low-fat cheeses at local markets are making watching calories a little easier also.

Dinner:
Heirloom Tomato and Cheese Tart

Summer is the best season for ripe, local tomatoes. If you are growing heirloom tomatoes, or can find them in your local supermarket or farmers market, their rich array of colors, ranging from purple to green, make a nice display on the tart. Serve with a crisp green salad.
