Breakfast:
Summer Fruit Parfait     

Load up a dish of your favorite summer fruit for this lovely, cool breakfast parfait. If you have never tried Greek-style yogurt with its lovely velvety texture, today is the day!

Lunch:
Roasted Zucchini and Mint Salad

Zucchini is plentiful this time of year, and mint is a deliciously refreshing accompaniment for this cool summer dish. Serve with a slice of rustic bread and you will be satisfied until dinnertime.

Dinner:
Mediterranean Lasagna

Everyone loves lasagna, and with this recipe, which features eggplant and red bell peppers, no one will be missing the meat. Make it ahead of time and dinner will be ready with a quick reheat for the next meal or two.
