Makes about 30 sandwiches, serving 20
If you don't have a roasting pan, make the Sloppy Joes in two large skillets. This recipe easily halves, but the meat freezes well, so you might want to make a big batch.
1/2 cup vegetable oil
5 medium-large onions, chopped
5 pounds ground beef or turkey
1 tablespoon garlic powder
4 cups (1 quart) ketchup
2/3 cup soy sauce
1 1/4 cups Dijon mustard
2/3 cup brown sugar
1/4 cup Worcestershire sauce
1 tablespoon red pepper sauce
Heat oil over medium-high heat in a large heavy-bottomed roasting pan (you can use a disposable roasting pan, but lower heat to medium) over two burners. Add onions; cook until tender, 5 to 7 minutes. Add ground meat, stirring frequently to break up large clumps; cook until no longer pink, drain any excess fat.
Mix remaining ingredients and stir them into the cooked meat. Continue to cook, stirring frequently, until mixture is thick, rich and not runny, 5 to 8 minutes. Serve, if you like, on buns.
