Sauteed Vegetables in Whole Wheat Pita

Try this healthy Sauteed Vegetables Pita recipe, recommended by Dr. Oz as part of his 6-Month Health Plan for AARP The Magazine. — Kathryn Rusell


Ingredients

1 tablespoon olive oil

3 tablespoons chopped red onion

1 clove garlic, finely chopped

6 brown mushrooms, sliced

1/2 cup thinly sliced zucchini

1/2 small red bell pepper, thinly sliced

1/4 teaspoon salt

1/4 teaspoon black pepper

1 whole wheat pita, warmed, sliced in half


Directions

1. In a medium skillet, heat the oil over medium heat. Add the onion and garlic, and sauté for 2 minutes, stirring occasionally. Mix in the mushrooms, zucchini, bell pepper, salt, and pepper, reduce the heat to medium-low, and cook for an additional 5 minutes.

2. Remove from the heat and divide mixture evenly among pita halves.

3. Serve with one medium apple.
