Round out a delicious day with muffins, spinach salad and a new spaghetti dish

Is your commitment to meatless Mondays waning? Here are three new healthy vegetarian recipes to help you stick with it and cut saturated fat from your diet at least one day a week.

Breakfast:
Orange Breakfast Muffin

Muffins are one of the easiest recipes to bake and they freeze well for convenience on another busy day. Enjoy these tasty confections with some tropical fruit and a steaming cup of coffee.

Lunch:
Lemon, Mint and Spinach Salad  

Mint adds a bright and complex flavor to so many dishes from salads and vegetables to roasted meats. Paired with nutrient-dense spinach, this may be one of the healthiest salads on your menu. Enjoy with some crusty bread. 

Dinner:
Sicily's Famous Spaghetti With Eggplant and Ricotta Salata 

Roast cubed eggplant in the oven as an alternative to frying it in olive oil as called for in the recipe. Top with your favorite tomato sauce and this easy spaghetti dish will satisfy everyone at the table.
