    Meatless Monday Recipes

    Start with pancakes, lunch on salad and finish the day with a low-cal mushroom burger

    Here are three new healthy vegetarian recipes to help you stick with your Meatless Monday commitment and cut saturated fat from your diet at least one day a week.

    Breakfast:
    American Breakfast Pancakes

    This recipe for pancakes is easy to whip up in the blender and cook up in your favorite skillet. Top with fresh fruit such as blueberries or strawberries for an extra-healthy version of this all-time favorite breakfast.

    Lunch:
    Pan-Grilled Eggplant and Zucchini Salad

    Zucchini is one of the most abundant vegetables of summertime. You will go back to this recipe again and again for a light lunch or a summer side dish.

    Dinner:
    Portobello Burger  

    Portobello mushrooms are a regular stand-in for meat and sometimes even the bun, as in this open-faced burger recipe. At 142 calories per serving, you might even have room for some fat-free frozen yogurt for dessert.
