Memorial Day means summer is here. So it’s time to bring out your picnic basket and flip flops and turn the corner to parades, fireworks, beach trips — and to firing up that grill.

The following recipes will appeal to everyone in the family, from vegetarians to meat eaters — even the kids. Some lighter versions of the classics, such as our grilled potato salad, are easy on the waistline. For the grownups, sangria and mint juleps will be welcome libations in the hot summer sun.
1) Carmen’s sangria by Francine Segan
This flavorful drink is a great choice to sip on while waiting for the family grill master to work his or her magic. It’s quick and simple to make: ice cubes made of juice don’t water down the sangria as they melt! Per serving: 153 calories, 0 g fat, 1 g protein, 1 g fiber
2) Classic mint juleps by Florence Fabricant
This drink most likely originated in the southern United States in the 18th century, and nearly 120,000 of them are served at the Kentucky Derby yearly. It embodies summer with its fresh minty taste, and cools you off just in time to enjoy the end of the day.

3) Grilled new potato and asparagus salad by Linda Zimmerman
Classic potato salad is a must at any barbecue. This grilled potato salad is a great healthy alternative to the traditional potato salad. Its added pick-me-up is asparagus, which is a good source of nutrients and antioxidants.
Per serving: 185 calories, 7 g fat, 5 g protein, 4 g fiber
4) Tender greens with pears, apples, grapes, gorgonzola and grilled chicken by Lauren Groveman
Although this salad works as a main course, it would make just as good an appetizer in smaller portions. Consider it a satisfying and sweet twist on the traditional grilled chicken salad. All of the nutritious fruits will keep you fuller for longer, with a cooling burst of flavor in each bite.

5) Black bean and roasted corn salad by Betsy DiJulio
This salad does a wonderful job of capturing all the flavors of summer. It’s chock full of fiber and has a zesty citrus kick. It is best to use fresh corn, if possible, to obtain the most rounded-out summer tastes. Sweet and spicy walnuts top off this salad, which are high in protein, vitamin E and antioxidants.
