    This portable version of the ever-popular Greek salad would be a great choice for summer picnics as well as everyday lunch and light suppers. Look for mini-pitas at your local supermarket to make easy appetizers for your next gathering.


    Coconut Curried Chickpea Soup

    Light coconut milk is widely available and will make this aromatic soup even healthier.
