As the days are getting warmer we are looking for lighter meals to keep us going strong. These meatless dishes are up to the task.

Breakfast:

Raspberry-Banana Smoothie

This smoothie recipe is sweetened by the bananas and some apple juice. It's a very healthy way to start the day.

Lunch:

Orange and Red Onion Salad Valencia

Red onions and oranges are a lovely food combination. Add avocados if they are handy for another delicious version of this dish.

Dinner:

Ear-Shaped Pasta With Baby Artichokes, White Wine, Garlic, Parsley and Bread Crumbs

Orecchiette, the little ear-shaped pasta, is fun to eat. It also holds up well to sauces and dressings for party dishes that need to hold awhile.
