This St. Patrick's Day we're highlighting the potato: the versatile, scrumptious, nutritious (it has lots of potassium and vitamin C) tuber that pairs perfectly with almost any meat, fish or vegetable. We've chosen slightly leaner recipes — with potatoes that are roasted, grilled, baked, fried, smashed, mashed or puréed. Try them on March 17 or any time of year. Erin go bragh!

Baked herbed potato wedges

1. Herbed Smashed Potatoes by Debra Ponzek

Not mashed — smashed! You can choose your favorite chopped herbs (thyme, oregano, tarragon or sage) and serve this as a wonderful complement to lamb, chicken or salmon.

Per serving: 321 calories, 2g saturated fat, 46g carbohydrates, 5g protein, 5g fiber

2. Sweet Potato Soup by Helen Nash

Here's a tasty hot starter that can feed a large group. Once you soften the potatoes, just blend the ingredients until smooth and creamy, then heat.

Per serving: 209 calories, 2g saturated fat, 37g carbohydrates, 5g protein, 4g fiber

3. Boxty by Colman Andrews

These traditional Irish potato pancakes (sometimes called "poundies") require only a few simple ingredients. They are typically fried, although you can bake them instead.

Per serving: 151 calories, 3g saturated fat, 23g carbohydrates, 3g protein, 1g fiber

4. Oven Fries by Sara Moutlon

These baked "fries" are not just healthier than the deep-fried version, they're also easier to make. You just need baking potatoes, extra virgin olive oil and kosher salt.

Per serving: 202 calories, 1g saturated fat, 32g carbohydrates, 4g protein, 4g fiber

5. Grilled Spicy New Potato Salad by Christopher Schlesinger and John Willoughby

If you're craving some spice, try this potato salad seasoned with Tabasco, mustard seeds, parsley, lemon and garlic. You can serve it warm or cold.

Per serving: 674 calories, 5g saturated fat, 84g carbohydrates, 12g protein, 10g fiber

6. Roast Sweet Potato With Sesame Glaze by Victoria Blashford-Snell and Brigitte Hafner

We know sesame glaze has nothing to do with the Irish, so if you're making corned beef, you might want to skip this one. But if not, try it — it's delicious!

7. Colcannon by Colman Andrews

One of the most famous Irish potato dishes, colcannon is a buttery mix of greens and potatoes, flavored with scallions.

8. Roasted Fingerling Potatoes by Tal Ronnen

Here's another super-simple baked recipe, this one seasoned with thyme. You can add different varieties of squash for a winter vegetable medley.

Per serving: 148 calories, 1g saturated fat, 20g carbohydrates, 2g protein, 3g fiber

9. Grilled New Potato and Asparagus Salad by Linda Zimmerman

Add some green to your Irish feast with this warm salad, which can include Yukon Gold or other potato varieties along with the asparagus, scallions, parsley and red onion.

Per serving: 185 calories, 1g saturated fat, 28g carbohydrates, 5g protein, 4g fiber

10. Sweet Potato Puree With Horseradish by Victoria Blashford-Snell and Brigitte Hafner

Horseradish and sweet potato is a unique flavor combination that makes this recipe a keeper. Leave out the heavy cream if you prefer a lighter dish.
