This St. Patrick's Day we're highlighting the potato: the versatile, scrumptious, nutritious (it has lots of potassium and vitamin C) tuber that pairs perfectly with almost any meat, fish or vegetable. We've chosen slightly leaner recipes — with potatoes that are roasted, grilled, baked, fried, smashed, mashed or puréed. Try them on March 17 or any time of year. Erin go bragh!
