Chef Nigella Lawson believes that bruschetta is a great choice for a light meal beyond the traditional evening appetizer. Toast some country bread and chop up some avocado as an alternative to tomatoes, or combine the two.

Lentil Soup

Soup is a great way to use up vegetables in the crisper that might be just a little past their prime. Add whatever you like to this recipe in addition to the carrots and celery for a savory and satisfying meal.

Pasta and Cauliflower Curry

Break away from the traditional curry and rice combo and try out this delicious recipe for curry and pasta. A good quality curry powder is worth the investment for any curry recipe.
