    Meatless Monday Recipes

    Fill your plate and tummy with millet, gratin and pasta

    Start your week with one or all of these healthy and hearty vegetarian recipes.

    Breakfast:

    Creamy Morning Millet With Apples

    Mornings are still chilly throughout most of the country. As a break from oatmeal, try millet — a delicious and hearty breakfast cereal. Add your favorite fruit and milk or milk substitute.

    Lunch:

    Potato, Olive and Ricotta Torta

    Serve this gratin with a green salad and use the leftovers for a dinner side dish later in the week. 

    Dinner:

    Pasta Puttanesca

    The ingredients for tonight's dinner are likely in the pantry. Try some of the wide variety of whole grain pastas available in markets everywhere. Steam some broccoli or asparagus on the side, and you have a quick, easy and wholesome dinner.
