Exploring New Frontiers on Food

Independent producer Karen Brown introduces us to Dr. Julian McClements, a food scientist who is determined to make higher-quality processed foods. He, for one, hates fish, but with a grant from the United States Department of Agriculture is working on injecting fish oil into other foods (that he's willing to eat).

Listen to learn more about his experiments and the controversy they’ve created, including charges of creating “Frankenfood” and trying to “out-engineer Mother Nature.” But, he says, these new foods could be a means to a healthier diet for those who don’t have the luxury of buying “whole foods” year-round.
