About Me

I was born and raised in Hawaii, and moved to So. California in 1970. I visit my family often in Hawaii, but love the lifestyle here on the mainland.



I am married, have (3) children, all grown, and have a wonderful husband who supports me in all of my endeavors, as I do with him. I also work, and currently work as an administrative assistant for a city. I also try to go to school to keep up with the technology and programs that is fast growing in our society and workplace environment, hence, being competitive as a viable employee in the workforce at my age. A must-do in today's society. Lack of knowledge will keep you behind in times as I observe these days.


I am 61 yrs. old this year! My profile picture was taken last year when I won the city's chili cookout contest among 30 plus entrants in the no beans entry, but best taste overall! I work under one city's department of managers who volunteered me to represent them. My secret ingredients are no secret...ask me and I'll tell you! Thought I'd change my profile picture like some of my dear friends here do every so often on aarp.org!


I am a bonafide senior citizen. I keep forgetting to take advantage of those senior discounts...LOL!

I was a grocery checker for 12 years, many years ago.  One of my customers gave me this recipe for Albondigas Soup that came from his wife's recipes (oh, oh...I don't know if she knew he shared this with me).  I have had so many great feedback when I share this recipe.  Easy...and very hearty on cold days....or you want to eat simple.  Enjoy....

Albondigas Soup

  • 1 to 11/2 lbs. ground meat
  • 1/2 onion chopped
  • 1 small diced tomato
  • 2 stalks celery, diced
  • 2 to 3 carrots, diced
  • 1/3 cup Italian bread crumbs - seasoned
  • 1 can string beans (optional)
  • 1/3 cup long grain rice
  • Diced bell peppers

Saute onions, tomatoes, and garlic.  Add enough boiling water to make at least 3 quarts of soup.  Mix ground meat with bread crumbs, 1 egg, salt and pepper to taste.  When making meatballs, handle lightly so that they will be fluffy, otherwise, they will be hard.  Add meatballs to soup mix, also, celery and carrots, and bell peppers.

Bring to second boil, turn flame to low and add rice and cilantro for taste (optional).  I use cilantro for taste.  When adding rice, add string beans.  Simmer for about 45 minutes or until rice is cooked.  I like to add 1 large potato (diced).  If you use potato, you add that when you put all the vegetables in.
