With more than 75 slow cooker recipes posted hither and yon in response to last week’s Savings Challenge, I felt as indecisive as a squirrel crossing a busy street when I went to choose a winner. “This one … no, that one … maybe this … oh, what about that one?”
Thank you to everyone who entered. It was a very difficult – but very delicious – decision to make. I was particularly impressed by the range of recipes submitted – a tribute to both the culinary diversity of Savings Challenge members and the versatility of the slow cooker.
A few of the recipes that really tickled my taste buds were:

·ASTRAEA’s Crock-Pot Chili
·JazzyTJan’s Cherry Cobbler
·MaryEileen’s Crock-Pot Lasagna
·shayheyred’s Lemon-Rosemary-Garlic Chicken
·And – a recipe after my own beer-loving, cheapskate heart, djalacran’s Drunken Spanish Rice (made with two cans of beer “borrowed” from friends!).
Then there were the ingenious, simple slow cooker recipes and techniques that I’d never thought about before, including:

· DanaAGreen’s Steel-Cut Oats
·Zil’s Slow-Cooker Apple Butter
·And dandelions’ simple Garlic Baked Potatoes, without even heating up the oven.
But, alas, in the end there can be only one prize winner, and that honor – and a complimentary Amazon gift card – goes to BarbBeall for her Peanut Butter Pork. I made it yesterday in my slow cooker and served it over rice with a side steam broccoli and carrots. I’d have the leftovers for lunch today, but there weren’t any … that’s how good it is.
PEANUT BUTTER PORK
1.5-2lbs boneless pork roast cut into large chunks
1 onion, sliced in rings
1⁄4 cup soy sauce
1⁄4 cup brown sugar
3 tbsp white wine vinegar
3 tbsp water
2 tbsp chopped garlic
1⁄2 cup smooth peanut butter
2 tbsp chopped peanuts (optional)
Use a 4-6 quart Crock-Pot. Put onion slices into the bottom of pot.Put the pork on top. Add brown sugar, soy sauce, vinegar, water, garlic and peanut butter. No need to stir. Cover and cook on low for eight hours. One hour before serving, flip the meat over in the Crock-Pot to allow the other side to soak up the peanut-buttery sauce.
